Beef stew with potatoes

Ingredients:

  • 2 lbs (900g) beef chuck, cut into 1-inch cubes
  • 3 tbsp olive oil
  • 1 onion, chopped
  • 2-3 garlic cloves, minced
  • 4 cups beef broth
  • 2 cups potatoes, peeled and diced
  • 3 carrots, peeled and sliced
  • 2-3 celery stalks, chopped
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 bay leaves
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Brown the Beef:

    • In a large pot or Dutch oven, heat olive oil over medium-high heat. Season the beef cubes with salt and pepper. Add the beef in batches, browning on all sides (about 5-7 minutes per batch). Remove and set aside.
  2. Sauté Vegetables:

    • In the same pot, add the chopped onion and cook until softened (about 3-4 minutes). Add the minced garlic and cook for another minute until fragrant.
  3. Add Broth and Seasonings:

    • Stir in the tomato paste and cook for 1 minute. Then, return the browned beef to the pot. Pour in the beef broth and add the thyme, rosemary, and bay leaves. Bring to a boil.
  4. Simmer:

    • Reduce the heat to low, cover, and let simmer for about 1.5 to 2 hours, or until the beef is tender.
  5. Add Vegetables:

    • After the beef is tender, add the diced potatoes, carrots, and celery to the pot. Season with salt and pepper. Cover and simmer for an additional 30-40 minutes, until the vegetables are tender.
